Sabrina Schanz has been acting as the pastry chef at @ritzcarlton, Berlin since June 2016. The 33 year old pastry chef and confectioner thinks that amongst the most important ingredients in patisserie, in her opinion, are cane sugar, Muscovado sugar, dark chocolate and passion fruit.
